Vegan Gnocchi mushroom and Avocado bowl!

Ingredients:
- 1 package (about 16 oz) of vegan gnocchi
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 8 oz mushrooms (such as cremini or button), sliced
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1 avocado, sliced
- Fresh parsley, chopped (for garnish)
For the sauce:
- 1/2 cup raw cashews, soaked in water for at least 2 hours (or boiled for 10 minutes)
- 1 cup vegetable broth
- Juice of 1 lemon
- 2 tablespoons nutritional yeast (optional)
- Salt and pepper to taste
Instructions:
- Cook the Gnocchi:
- Cook the gnocchi according to package instructions. Drain and set aside.
- Make the Sauce:
- In a blender, combine the soaked cashews, vegetable broth, lemon juice, nutritional yeast, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
- Prepare the Mushrooms:
- Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
- Add the minced garlic and cook for another 1-2 minutes until fragrant.
- Add the sliced mushrooms to the skillet, along with the dried thyme, salt, and pepper. Cook until the mushrooms are tender and browned, about 8-10 minutes.
- Combine Everything:
- Once the mushrooms are cooked, add the cooked gnocchi to the skillet. Pour the cashew sauce over the gnocchi and mushrooms, stirring gently to combine and heat through.
- Serve:
- Divide the gnocchi, mushroom, and sauce mixture into bowls. Top each bowl with sliced avocado and chopped fresh parsley.
