Vegan Gnocchi mushroom and Avocado bowl!

Ingredients:

  • 1 package (about 16 oz) of vegan gnocchi
  • 2 tablespoons olive oil
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 8 oz mushrooms (such as cremini or button), sliced
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 1 avocado, sliced
  • Fresh parsley, chopped (for garnish)

For the sauce:

  • 1/2 cup raw cashews, soaked in water for at least 2 hours (or boiled for 10 minutes)
  • 1 cup vegetable broth
  • Juice of 1 lemon
  • 2 tablespoons nutritional yeast (optional)
  • Salt and pepper to taste

Instructions:

  1. Cook the Gnocchi:
    • Cook the gnocchi according to package instructions. Drain and set aside.
  2. Make the Sauce:
    • In a blender, combine the soaked cashews, vegetable broth, lemon juice, nutritional yeast, salt, and pepper. Blend until smooth and creamy. Adjust seasoning to taste.
  3. Prepare the Mushrooms:
    • Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
    • Add the minced garlic and cook for another 1-2 minutes until fragrant.
    • Add the sliced mushrooms to the skillet, along with the dried thyme, salt, and pepper. Cook until the mushrooms are tender and browned, about 8-10 minutes.
  4. Combine Everything:
    • Once the mushrooms are cooked, add the cooked gnocchi to the skillet. Pour the cashew sauce over the gnocchi and mushrooms, stirring gently to combine and heat through.
  5. Serve:
    • Divide the gnocchi, mushroom, and sauce mixture into bowls. Top each bowl with sliced avocado and chopped fresh parsley.
  6. Enjoy!
