Vegan Fried dirty jerk cabbage


Ingredients:
1 head of green cabbage, finely shredded
1 red onion, sliced
2 cloves of garlic, minced
1 jalapeño pepper, finely diced
1 tsp allspice
1 tsp dried thyme
1 tsp smoked paprika
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp cayenne pepper (optional)
Salt and pepper, to taste
2 tbsp olive oil
1 tbsp vegan butter
1 tbsp maple syrup
1 tbsp soy sauce or tamari
1 tbsp red wine vinegar or lime juice
Instructions:
In a large skillet or wok, heat the olive oil over medium-high heat. Add the red onion and sauté for 2-3 minutes, or until softened.
Add the garlic and jalapeño pepper and sauté for another minute.
Stir in the shredded cabbage, allspice, thyme, smoked paprika, cinnamon, nutmeg, cloves, cayenne pepper (if using), salt, and pepper. Sauté for 5-7 minutes, or until the cabbage is wilted and tender.
In a small saucepan, melt the vegan butter over low heat. Stir in the maple syrup, soy sauce or tamari, and red wine vinegar or lime juice. Pour the sauce over the cabbage and stir until well combined.
Cook for another 2-3 minutes, or until the sauce is heated through.
