Vegan Date Dessert


Ingredients:
1 cup seedless dates
1/2 cup mixed nuts and seeds (e.g., almonds, walnuts, sunflower seeds, chia seeds)
1/3 cup nut butter (e.g., almond butter, cashew butter, or peanut butter)
3 tablespoons raw cacao powder (100%)
Plant-based milk (e.g., almond, soy, oat) — just enough to soften the mixture
Instructions:
Prepare Dates: If your dates are not already soft, soak them in warm water for 10 minutes, then drain and pat dry.
Blend Ingredients: In a blender or food processor, combine the dates, mixed nuts and seeds, nut butter, and raw cacao powder. Blend until the mixture is well combined and starts to form a dough-like consistency.
Adjust Consistency: If the mixture is too dry or crumbly, gradually add a small amount of plant-based milk (1 tablespoon at a time) until it reaches a smooth, pliable consistency.
Press into Molds: Transfer the mixture into a form or molds (using smaller molds or a lined dish for easier portioning). Press it down firmly to compact the mixture.
Add Topping: Sprinkle a little extra mixed nuts and seeds on top of the mixture, pressing them gently into the surface.
Freeze: Place the mold in the freezer for about 1 hour to firm up.
