Vegan Curry Recipe.
Coconut Spinach Chickpea Curry Recipe:
Ingredients:
- 1 can chickpeas
- 1 can coconut milk
- 1 cup spinach leaves
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1 tablespoon oil
- Salt to taste
Instructions:
- Heat oil in a pan and sauté onion, garlic and ginger till onions are translucent.
- Add cumin powder, coriander powder, turmeric powder, and red chili powder to the pan and cook for 1-2 minutes.
- Add chickpeas and coconut milk to the pan and let it simmer for 10-15 minutes.
- Add spinach leaves and cook until they wilt.
- Serve hot with white rice.
King Oyster Mushroom Recipe:
Ingredients:
- 2 king oyster mushrooms, sliced
- 1 tablespoon oil
- Salt to taste
Instructions:
- Heat oil in a pan and add sliced king oyster mushrooms.
- Cook for 5-7 minutes or until they turn golden brown.
- Add salt to taste and stir well.
- Serve hot with coconut spinach chickpea curry and white rice.
