Vegan Curry Recipe.

Coconut Spinach Chickpea Curry Recipe:

Ingredients:

  • 1 can chickpeas
  • 1 can coconut milk
  • 1 cup spinach leaves
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon grated ginger
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1 teaspoon turmeric powder
  • 1/2 teaspoon red chili powder
  • 1 tablespoon oil
  • Salt to taste

Instructions:

  1. Heat oil in a pan and sauté onion, garlic and ginger till onions are translucent.
  2. Add cumin powder, coriander powder, turmeric powder, and red chili powder to the pan and cook for 1-2 minutes.
  3. Add chickpeas and coconut milk to the pan and let it simmer for 10-15 minutes.
  4. Add spinach leaves and cook until they wilt.
  5. Serve hot with white rice.

King Oyster Mushroom Recipe:

Ingredients:

  • 2 king oyster mushrooms, sliced
  • 1 tablespoon oil
  • Salt to taste

Instructions:

  1. Heat oil in a pan and add sliced king oyster mushrooms.
  2. Cook for 5-7 minutes or until they turn golden brown.
  3. Add salt to taste and stir well.
  4. Serve hot with coconut spinach chickpea curry and white rice.
