VEGAN CHEESY STUFFED POTATO SKINS


Ingredients:
4 medium-sized russet potatoes
1/2 cup vegan cheddar cheese shreds
1/4 cup vegan sour cream
1/4 cup chopped green onions
Salt and pepper, to taste
Olive oil, for brushing
Instructions:
Preheat your oven to 400°F (200°C).
Wash the potatoes and pierce them several times with a fork. Brush with olive oil and sprinkle with salt and pepper.
Bake the potatoes for 45-50 minutes or until they are tender.
Remove the potatoes from the oven and let them cool slightly.
Cut each potato in half and scoop out most of the flesh, leaving a thin layer of potato in the skins.
In a mixing bowl, combine the potato flesh, vegan cheddar cheese shreds, vegan sour cream, and chopped green onions. Mix well.
Spoon the mixture back into the potato skins.
Place the stuffed potato skins on a baking sheet and return them to the oven. Bake for another 10-15 minutes or until the cheese is melted and the skins are crispy.
Serve hot and enjoy!
