Vegan Blueberry Donuts recipe

β Ingredients:
Dry ingredients:
- 1 1/4 cups all-purpose flour
- 1/2 cup granulated sugar (organic, to ensure it’s vegan)
- 1 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/4 tsp salt
Wet ingredients:
- 1/2 cup non-dairy milk (almond, soy, oat, etc.)
- 1/4 cup unsweetened applesauce
- 2 tbsp coconut oil or canola oil (melted)
- 1 tsp vanilla extract
- 1/2 tsp apple cider vinegar (for a fluffy texture)
Add-ins:
- 1/2 cup fresh or frozen blueberries (if using frozen, do not thaw)
π©βπ³ Instructions:
- Preheat oven to 350Β°F (175Β°C). Lightly grease a donut pan.
- Mix dry ingredients in a large bowl: flour, sugar, baking powder, baking soda, and salt.
- Whisk wet ingredients in a separate bowl: non-dairy milk, applesauce, melted oil, vanilla, and vinegar.
- Combine wet and dry ingredients. Stir gently until just combined β donβt overmix.
- Fold in blueberries carefully to avoid bleeding (especially if using frozen).
- Fill the donut pan about 3/4 full in each cavity. You can use a spoon or pipe the batter using a ziplock bag with the corner snipped off.
- Bake for 15β18 minutes, or until the tops are lightly golden and a toothpick comes out clean.
- Cool in the pan for 5 minutes, then transfer to a wire rack to cool completely before glazing.
π Optional Blueberry Glaze:
Ingredients:
- 1/2 cup powdered sugar
- 1β2 tsp non-dairy milk
- 1 tbsp blueberry juice or mashed blueberries (strained)
Instructions:
- Mix all glaze ingredients until smooth.
- Dip cooled donuts or drizzle on top.
- Let the glaze set for 15β20 minutes.
