Vegan Basmati rice with vegetables
Vegan Basmati rice with vegetables
Ingredients:
- 1 cup Basmati rice
- 2 cups water
- 1 tbsp olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, chopped
- 1 red bell pepper, chopped
- 1 cup chopped spinach
- 1 tsp cumin powder
- 1 tsp coriander powder
- Salt and pepper to taste
- Fresh cilantro, chopped for garnish
Instructions:
- Rinse the Basmati rice thoroughly with water and soak it for 30 minutes. Drain the water and keep the rice aside.
- In a large pot, heat the olive oil over medium heat. Add the onion and garlic and sauté for a few minutes until the onion turns translucent.
- Add the chopped carrot, red bell pepper, and spinach to the pot and sauté for another 5-7 minutes.
- Add the cumin powder, coriander powder, salt, and pepper to the pot and stir well.
- Add the soaked Basmati rice to the pot and stir gently to mix the rice with the vegetables.
