Vegan Banana Ice Cream

Ingredients:

  • 4 ripe bananas
  • 1 teaspoon vanilla extract (optional)
  • 2-3 tablespoons plant-based milk (almond, soy, oat, etc.) (optional)

Optional Mix-ins:

  • Nuts (such as chopped almonds, pecans, or walnuts)
  • Chocolate chips (dairy-free)
  • Fresh or frozen berries
  • Nut butter (peanut butter, almond butter, etc.)

Instructions:

  1. Prepare the Bananas:
    • Peel the bananas and cut them into thin slices.
    • Place the banana slices in a single layer on a baking sheet lined with parchment paper.
    • Freeze the banana slices for at least 2-3 hours or until completely frozen.
  2. Blend the Bananas:
    • Once the banana slices are frozen, place them in a high-speed blender or food processor.
    • Blend the bananas until they start to break down. You may need to stop and scrape down the sides of the blender or food processor a few times.
    • Continue blending until the bananas become smooth and creamy. If the mixture is too thick, you can add a tablespoon or two of plant-based milk to help it blend more easily.
  3. Add Flavorings and Mix-ins:
    • If you want to add vanilla extract, do so now and blend until combined.
    • You can also fold in any optional mix-ins at this stage.
  4. Serve:
    • The banana ice cream can be served immediately for a soft-serve consistency.
    • For a firmer texture, transfer the ice cream to an airtight container and freeze for an additional 1-2 hours.
  5. Enjoy:
    • Scoop the ice cream into bowls and enjoy!
