Vegan Banana Ice Cream

Ingredients:
- 4 ripe bananas
- 1 teaspoon vanilla extract (optional)
- 2-3 tablespoons plant-based milk (almond, soy, oat, etc.) (optional)
Optional Mix-ins:
- Nuts (such as chopped almonds, pecans, or walnuts)
- Chocolate chips (dairy-free)
- Fresh or frozen berries
- Nut butter (peanut butter, almond butter, etc.)
Instructions:
- Prepare the Bananas:
- Peel the bananas and cut them into thin slices.
- Place the banana slices in a single layer on a baking sheet lined with parchment paper.
- Freeze the banana slices for at least 2-3 hours or until completely frozen.
- Blend the Bananas:
- Once the banana slices are frozen, place them in a high-speed blender or food processor.
- Blend the bananas until they start to break down. You may need to stop and scrape down the sides of the blender or food processor a few times.
- Continue blending until the bananas become smooth and creamy. If the mixture is too thick, you can add a tablespoon or two of plant-based milk to help it blend more easily.
- Add Flavorings and Mix-ins:
- If you want to add vanilla extract, do so now and blend until combined.
- You can also fold in any optional mix-ins at this stage.
- Serve:
- The banana ice cream can be served immediately for a soft-serve consistency.
- For a firmer texture, transfer the ice cream to an airtight container and freeze for an additional 1-2 hours.
- Enjoy:
- Scoop the ice cream into bowls and enjoy!
