Vegan Avocado Flat Bread

Ingredients:

For the Flatbread:
  • 2 ripe avocados
  • 2 cups all-purpose flour (or a gluten-free flour blend)
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 tablespoon lemon juice
  • 1/2 cup warm water (adjust as needed)
  • For Topping (Optional):
  • Cherry tomatoes, sliced
  • Fresh basil leaves
  • Olive oil for drizzling
  • Salt and pepper to taste
  • Instructions:
  • 1. Prepare the Avocado Dough:
  • In a bowl, mash the ripe avocados until smooth. Mix gluten-free flour blend, baking powder, salt, and lemon juice into the dough. Combine well.
  • 2. Form a Dough:
  • Add warm water little by little to the mix until a soft dough forms. For a few minutes, knead the dough until it gets smooth and springy.
  • 3. Rest the Dough:
  • Cover the dough with a clean kitchen towel and let it rest for about 15-20 minutes.
  • 4. Preheat the Oven:
  • Warm the oven up to 200°C (400°F).
  • 5. Divide and Roll Out:
  • Split the dough into four equal pieces. Roll out each piece into a thin, flat round on a floured surface.
  • 6. Bake:
  • Place the rolled-out dough on a baking sheet. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  • 7. Optional Toppings:
  • If desired, top the baked flatbreads with sliced cherry tomatoes, fresh basil leaves, a drizzle of olive oil, and a sprinkle of salt and pepper.
  • 8. Serve and Enjoy:
