VEAGN POTATOES AND ONIONS

Ingredients:

  • 4 large potatoes, peeled and thinly sliced
  • 2 large onions, thinly sliced
  • 3 tablespoons olive oil (or your preferred cooking oil)
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 400°F (200°C).
  2. Prepare the Ingredients:
    • Peel and thinly slice the potatoes and onions. Try to make the slices as uniform as possible for even cooking.
  3. Season the Vegetables:
    • In a large mixing bowl, combine the sliced potatoes and onions.
    • Add the olive oil, minced garlic, dried thyme, dried rosemary, paprika, salt, and pepper.
    • Toss everything together until the potatoes and onions are evenly coated with the oil and seasonings.
  4. Bake the Dish:
    • Spread the seasoned potatoes and onions in a single layer on a large baking sheet or in a baking dish.
    • Ensure the vegetables are spread out to allow for even roasting and to prevent steaming.
  5. Roast in the Oven:
    • Place the baking sheet or dish in the preheated oven.
    • Roast for 30-40 minutes, or until the potatoes are tender and golden brown. Stir the potatoes and onions halfway through cooking to ensure they cook evenly.
  6. Serve:
    • Once the potatoes and onions are cooked to your liking, remove them from the oven.
    • Garnish with fresh chopped parsley if desired.
    • Serve hot as a side dish or a main course.
