VEAGN POTATOES AND ONIONS
Ingredients:
- 4 large potatoes, peeled and thinly sliced
- 2 large onions, thinly sliced
- 3 tablespoons olive oil (or your preferred cooking oil)
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 400°F (200°C).
- Prepare the Ingredients:
- Peel and thinly slice the potatoes and onions. Try to make the slices as uniform as possible for even cooking.
- Season the Vegetables:
- In a large mixing bowl, combine the sliced potatoes and onions.
- Add the olive oil, minced garlic, dried thyme, dried rosemary, paprika, salt, and pepper.
- Toss everything together until the potatoes and onions are evenly coated with the oil and seasonings.
- Bake the Dish:
- Spread the seasoned potatoes and onions in a single layer on a large baking sheet or in a baking dish.
- Ensure the vegetables are spread out to allow for even roasting and to prevent steaming.
- Roast in the Oven:
- Place the baking sheet or dish in the preheated oven.
- Roast for 30-40 minutes, or until the potatoes are tender and golden brown. Stir the potatoes and onions halfway through cooking to ensure they cook evenly.
- Serve:
- Once the potatoes and onions are cooked to your liking, remove them from the oven.
