TRIPLE BERRY POPSICLES – 2 WAYS

Berry and Vanilla pops 

2 cups of vanilla ice cream thawed (store bought or home made)
1 cup mixed berries frozen or fresh (raspberry, blueberry and blackberry)
I did not add any sugar, but if you want to add go ahead.

I used frozen berries – thawed them for a bit and used a fork to crush them a bit, it was juicy and messy – kind of fun 🙂

Take the popsicle mold add the massacred berries on the bottom and vanilla ice-cream on the top, add the wooden stick, swirl it a bit with a toothpick to make some interesting patterns, freeze for 4-5 hours. Remove from mold and serve chilled.

Plain berry pops 

1 cup mixed berries frozen or fresh (raspberry, blueberry and blackberry)
1/4 cup crushed candied ginger
3/4 cup fresh orange juice
1/4 cup sugar

Dissolve the sugar in the orange juice and keep aside.

Thaw the berries and mush them with a fork, mix them into the orange juice and add the candied ginger.

Pour them into the popsicle mold and freeze them for 30 min, remove from freezer and add the stick. Freeze overnight, enjoy chilled.
