Tofu Spring Rolls with Peanut sauce


I use butter lettuce or baby Romain as the base
Top with shredded cabbage and carrots. My food processor makes this easy!!
Sliced or julienned green onion and seeded jalapeño
and a tofu spear.
Could add a cucumber spear also.
Fresh herbs really make this pop.
I used fresh mint, cilantro, and basil.
Peanut sauce is a
Scoop peanut butter,
Mae ploy Thai chili sauce,
tsp. or two soy sauce,
and splash water to thin.
Mix to your liking
