The Best Keto Chocolate Fudge

Ingredients:

  • 1 cup unsweetened chocolate (dark chocolate with at least 70% cocoa solids), chopped
  • 1/2 cup coconut oil
  • 1/4 cup unsweetened almond butter
  • 1/4 cup powdered low-carb sweetener (e.g., erythritol or monk fruit)
  • 1 teaspoon vanilla extract
  • A pinch of salt
  • Optional: Chopped nuts, unsweetened shredded coconut, or sea salt for topping

Instructions:

  1. Line a small square or rectangular pan with parchment paper, leaving some overhang on the sides for easy removal.
  2. In a heatproof bowl, combine the chopped chocolate, coconut oil, and almond butter.
  3. Create a double boiler by placing the bowl over a pot of simmering water. Stir the mixture continuously until it’s completely melted and well combined.
  4. Remove the bowl from heat and let it cool slightly.
  5. Stir in the powdered sweetener, vanilla extract, and a pinch of salt. Mix until smooth.
  6. Pour the chocolate mixture into the prepared pan, spreading it evenly.
  7. If desired, sprinkle chopped nuts, shredded coconut, or a touch of sea salt over the top.
  8. Refrigerate the fudge for at least 2-3 hours or until it’s set.
  9. Once set, use the parchment paper overhang to lift the fudge out of the pan.
