Sweet Potato Lentil Coconut Curry

Ingredients:

  • 2 tablespoons coconut oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup red lentils, rinsed and drained
  • 1 can (14 oz) coconut milk
  • 2 cups vegetable broth
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan bread (for serving)

Instructions:

  1. Heat coconut oil in a large pot over medium heat. Add diced onion and cook until translucent, about 5 minutes.
  2. Add minced garlic and ginger to the pot and cook for another 2 minutes, stirring frequently.
  3. Stir in diced sweet potatoes, red lentils, coconut milk, and vegetable broth. Bring the mixture to a boil.
  4. Once boiling, reduce the heat to low and stir in curry powder, ground cumin, ground turmeric, paprika, salt, and pepper.
  5. Simmer the curry uncovered for about 20-25 minutes, or until the sweet potatoes are tender and the lentils are cooked through, stirring occasionally.
  6. Taste and adjust seasoning if necessary.
  7. Serve the sweet potato lentil coconut curry hot, garnished with fresh chopped cilantro. Enjoy with cooked rice or naan bread.
