Stuffing Balls

Ingredients

  • 1 lb (450g) ground sausage (pork, chicken, or turkey)
  • 1/2 cup almond flour
  • 1/4 cup crushed pork rinds (optional for extra crispiness)
  • 1 large egg
  • 1/2 cup celery, finely diced
  • 1/2 cup onion, finely diced
  • 1/4 cup fresh parsley, chopped
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp dried thyme
  • 1/4 tsp dried sage
  • 1/4 tsp salt (adjust to taste)
  • 1/4 tsp black pepper
  • 2 tbsp butter or olive oil for sautéing

Instructions

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Sauté the vegetables:
    • Heat butter or olive oil in a skillet over medium heat.
    • Add diced celery and onion, cooking until softened (about 5 minutes). Set aside to cool slightly.
  3. Prepare the stuffing mixture:
    • In a large mixing bowl, combine the ground sausage, sautéed vegetables, almond flour, crushed pork rinds (if using), egg, parsley, and all seasonings.
    • Mix well until all ingredients are evenly distributed.
  4. Shape into balls:
    • Use your hands or a small scoop to form the mixture into 1- to 1.5-inch balls. Place them on the prepared baking sheet.
  5. Bake:
    • Bake in the preheated oven for 20–25 minutes, or until the balls are golden brown and cooked through.
  6. Serve warm:
    • Enjoy these delicious stuffing balls with gravy or as a side dish to your keto-friendly meal.

Tips

  • Add cheese for a richer flavor—try shredded Parmesan or mozzarella.
  • Storage: Store leftovers in an airtight container in the fridge for up to 3 days or freeze for later use.
