Stuffing Balls

Ingredients
- 1 lb (450g) ground sausage (pork, chicken, or turkey)
- 1/2 cup almond flour
- 1/4 cup crushed pork rinds (optional for extra crispiness)
- 1 large egg
- 1/2 cup celery, finely diced
- 1/2 cup onion, finely diced
- 1/4 cup fresh parsley, chopped
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp dried thyme
- 1/4 tsp dried sage
- 1/4 tsp salt (adjust to taste)
- 1/4 tsp black pepper
- 2 tbsp butter or olive oil for sautéing
Instructions
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Sauté the vegetables:
- Heat butter or olive oil in a skillet over medium heat.
- Add diced celery and onion, cooking until softened (about 5 minutes). Set aside to cool slightly.
- Prepare the stuffing mixture:
- In a large mixing bowl, combine the ground sausage, sautéed vegetables, almond flour, crushed pork rinds (if using), egg, parsley, and all seasonings.
- Mix well until all ingredients are evenly distributed.
- Shape into balls:
- Use your hands or a small scoop to form the mixture into 1- to 1.5-inch balls. Place them on the prepared baking sheet.
- Bake:
- Bake in the preheated oven for 20–25 minutes, or until the balls are golden brown and cooked through.
- Serve warm:
- Enjoy these delicious stuffing balls with gravy or as a side dish to your keto-friendly meal.

- Add cheese for a richer flavor—try shredded Parmesan or mozzarella.
