Stuffed potato
I added sun dried tomatoes and mushrooms to the walnuts. I seasoned my potato with butter, salt and pepper, then topped it with the walnut mixture, roasted broccoli, smashed, avocado, salsa, sun-dried tomatoes, and sour cream. So good and filling

Soak 1 cup of walnuts in a bowl with hot water for at least 30 minutes. I did it for an hour this time. I chopped 1/2 onion, 1/4 green pepper, 1/4 yellow pepper, 4 gloves garlic, 2 sprigs scallion. Sauté all this in some olive oil (med heat) for about 15 mins. While that’s cooking, drain your walnuts and pulse them in the blender until you get the consistency you want. This time I did it pretty fine bc it cooks up creamier. Add walnuts to pepper mixture and add seasons:
Taco season
Garlic powder
Onion powder
Fajita season
Salt free southwest chipotle season
Black pepper
Red pepper flakes
Cumin
2 dashes liquid smoke
Teaspoon of browning sauce
Cook for about 2 minutes and add veggie stock or water. I added about a cup at the time until it evaporated. Turn on med-low. Cook for about 30-45 minutes or until it’s as tender as you like
