STUFFED BUFFALO CHICKEN SHELL
Ingredients:
- Large pasta shells – 24 shells
- Chicken breast – 2, cooked and shredded
- Buffalo sauce – 1 cup
- Cream cheese – 4 oz, softened
- Ranch dressing – ½ cup
- Cheddar cheese – 1 cup, shredded
- Mozzarella cheese – 1 cup, shredded
- Green onions – 3, chopped
- Garlic powder – 1 tsp
- Onion powder – 1 tsp
- Salt and pepper – to taste
- Olive oil – for cooking
- Optional garnishes: extra buffalo sauce, ranch dressing, and chopped green onions
Instructions:
- Preparation:
- Preheat your oven to 350°F (175°C).
- Cook the pasta shells according to the package instructions until they are al dente. Drain and set aside.
- In a bowl, mix together the shredded chicken and buffalo sauce.
- Making the Filling:
- In another bowl, combine the cream cheese, ranch dressing, half of the cheddar cheese, half of the mozzarella cheese, green onions, garlic powder, onion powder, salt, and pepper. Mix well.
- Add the buffalo chicken to this mixture and stir until well combined.
- Stuffing the Shells:
- Grease a baking dish with a little olive oil.
- Take a pasta shell and stuff it with the buffalo chicken and cheese mixture. Place the stuffed shell in the baking dish. Repeat with the remaining shells.
- Baking:
- Once all the shells are stuffed and placed in the dish, sprinkle the remaining cheddar and mozzarella cheese over the top.
- Bake in the preheated oven for about 20-25 minutes, or until the cheese is melted and bubbly.
- Serving:
- Let the shells cool for a few minutes after removing them from the oven.
- Garnish with extra buffalo sauce, ranch dressing, and chopped green onions if desired.
- Serve warm and enjoy!
