Strawberry Cheesecake Stuffed French Toast

Ingredients:

For the Cheesecake Filling:

– 8 oz cream cheese, softened

– 1/4 cup sugar

– 1 teaspoon vanilla extract

For the French Toast:

– 8 slices thick bread (brioche or Texas toast)

– 4 large eggs

– 1 cup milk

– 1 teaspoon vanilla extract

– 1/2 teaspoon cinnamon

– Butter for cooking 🧈

For the Strawberry Topping:

– 1 cup fresh strawberries, sliced 🍓

– 1/4 cup sugar

– 1 tablespoon lemon juice 🍋

Instructions:

1. Make Cheesecake Filling:

Mix the cream cheese, sugar, and vanilla extract until smooth. 🥄

2. Prepare Strawberry Topping:

Combine the strawberries, sugar, and lemon juice. Set aside. 🍓

3. Assemble Sandwiches:

Spread the cheesecake filling on 4 slices of bread. Top with the remaining slices. 🍞

4. Make Egg Mixture:

Whisk together the eggs, milk, vanilla, and cinnamon in a shallow bowl.

5. Cook French Toast:

Heat a skillet over medium heat with butter. Dip the sandwiches in the egg mixture, coat both sides, and cook 3-4 minutes per side until golden. 🍳
