Spring Vegetable and Bacon Hash Brown Muffins

Ingredients

– 4 cups of frozen hash browns, thawed and drained
– 8 slices of bacon, cooked and crumbled
– 1 cup of sharp cheddar cheese, shredded
– 1/2 cup of fresh asparagus, finely chopped
– 1/2 cup of bell pepper, diced (choose a variety for color)
– 1/4 cup of green onions, thinly sliced
– 1/2 cup of whole milk
– 6 large eggs
– 1 teaspoon of salt
– 1/2 teaspoon of black pepper
– Butter, for greasing the muffin tin

Directions

1. Preheat your oven to 400 degrees F. Generously butter a 12-cup muffin tin.

2. In a large bowl, mix together the hash browns, crumbled bacon, and shredded cheese.

3. Toss in the asparagus, bell peppers, and green onions, and give it another good stir to distribute all the ingredients evenly.

4. In a separate bowl, whisk together the milk, eggs, salt, and black pepper until well combined.

5. Pour the egg mixture over the hash brown mixture and stir until everything is moistened.

6. Spoon the mixture into the muffin tins, filling each cup to just below the top.

7. Bake in the preheated oven for 25-30 minutes, or until the tops are golden brown and the muffins are set in the center.

8. Let them cool for a few minutes in the tin, then run a knife around the edges and gently lift each muffin out onto a wire rack.

Variations & Tips

– Feel free to mix up the vegetables based on what’s fresh and available. Radishes or zucchini also work nicely.
– For a lighter version, use turkey bacon and swap in half of the cheddar for a less fatty cheese like mozzarella.
– Make sure to squeeze out any excess moisture from the hash browns to prevent soggy muffins.
– These muffins freeze well, so you can easily double the batch and save some for later. Just reheat in the oven for best results.
– For a spicy kick, add in a little bit of diced jalapeƱo or a sprinkle of cayenne pepper.
