Delicious Tangy Spicy Chicken stuffed with Feta and Salsa an easy meal packed with flavour. Slimming Eats and Weight Watchers friendly..
Ingredients
For the Chicken
- 2 Boneless Skinless Chicken Breasts, raw (approx 170g/6oz each)
- 45g (1.6oz) of Feta Cheese
- 4 tablespoons of salsa (no sugar)
- Olive oil spray
- Fresh chopped parsley (or cilantro)
For the Seasoning
- 1 teaspoon of paprika (not smoked)
- ½ teaspoon of garlic powder
- ½ teaspoon of onion powder
- pinch of cayenne (optional)
- salt and black pepper
Instructions
- Add the seasoning ingredients to a bowl and mix to combine
- Preheat oven to 200c, fan 180c, 400f or gas mark 6
- Add the seasoning to the chicken breasts on both sides.
- Make a slit in the chicken breasts to form a pocket and stuff each chicken breast with ½ of the feta and two tablespoons of salsa
- Place in an oven proof dish and spray over the top with olive oil spray
- Bake for approx 20 minutes until chicken is cooked through
- Sprinkle with fresh chopped parsley (or cilantro)
- Serve with choice of sides and enjoy!!
