Ingredients:
- 1 1/2 cups all-purpose flour (or use a gluten-free blend for a gluten-free option)
- 1/4 cup granulated sweetener (like Stevia or monk fruit for a low-sugar version)
- 1/4 tsp salt
- 1 tbsp baking powder
- 1/4 cup cold unsalted butter, cubed
- 1/2 cup heavy cream (or buttermilk for a lighter version)
- 1 tsp vanilla extract
- 1 egg, beaten (for egg wash, optional)
- Optional: A handful of dried fruit, raisins, or berries for added flavor
Instructions:
- Prepare the dough:
In a large bowl, whisk together the flour, sweetener, salt, and baking powder. Add the cold cubed butter and use a pastry cutter, fork, or your hands to work the butter into the flour until the mixture resembles coarse crumbs. - Add liquids:
Stir in the heavy cream and vanilla extract until the dough comes together. If the dough feels too dry, add a splash more cream. If you’re adding dried fruit or berries, gently fold them in at this point. - Form the scones:
Turn the dough out onto a floured surface and gently knead it a few times to bring it together. Shape the dough into a disc about 1-inch thick. Cut the dough into 6 wedges, like a pizza. - Preheat the air fryer:
Preheat the air fryer to 330°F (165°C) for 3–5 minutes. - Cook the scones:
Place the scones in the air fryer basket, making sure they don’t touch each other. Brush the tops with the beaten egg for a golden finish. Air fry at 330°F (165°C) for 12–15 minutes, or until the scones are golden brown on top and cooked through in the center.
