Saag Aloo (potato and spinach curry

Saag Aloo (potato and spinach curry
Ingredients:
1x bag of baby spinach
1x onion
7x or so yellow potatoes
2x tins of diced tomatos
Garlic cloves
Spices; garam masala, ground cumin, ground coriander, mustard seeds, curry powder
Chop the potatoes into small chunks then boil until tender. Chop onions. Set potatoes and onions aside once cooked/chopped.
With a liberal serving of oil, fry the the mustard seeds and spices until fragrant and add the potatoes and onions.
Once the potatoes are slightly crisp and onions are soft, add the diced tomatoes.
Add spinich in manageable amounts and let it simmer on low while cooking rice
