Perfectly Crispy Air Fryer Carrots and Parsnips

Ingredients:

  • 3 large carrots
  • 3 large parsnips
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley for garnish (optional)

Instructions:

  1. Prepare the Vegetables:
    • Peel the carrots and parsnips.
    • Cut them into evenly sized sticks or chunks, about 2-3 inches long and 1/2 inch thick.
  2. Season the Vegetables:
    • In a large bowl, combine the olive oil, garlic powder, paprika, dried thyme, salt, and black pepper.
    • Add the carrot and parsnip sticks to the bowl and toss until they are evenly coated with the seasoning mixture.
  3. Preheat the Air Fryer:
    • Preheat your air fryer to 375°F (190°C) for about 3-5 minutes.
  4. Air Fry the Vegetables:
    • Place the seasoned carrot and parsnip sticks in the air fryer basket in a single layer. Do not overcrowd; you may need to cook in batches.
    • Cook at 375°F (190°C) for 15-20 minutes, shaking the basket or tossing the vegetables halfway through the cooking time to ensure even crisping.
    • Check for doneness; they should be golden brown and crispy on the outside but tender on the inside.
  5. Serve:
    • Once cooked, transfer the crispy carrots and parsnips to a serving platter.
    • Garnish with fresh parsley if desired.
    • Serve immediately as a side dish or snack.
