Peanut butter, banana & chocolate chip protein cookies
Ingredients:
- 1 cup ripe bananas, mashed (about 2 medium bananas)
- 1 cup creamy peanut butter (or your favorite nut butter)
- 1/2 cup honey or maple syrup
- 1 teaspoon vanilla extract
- 1 1/2 cups rolled oats
- 1/2 cup vanilla protein powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup dark chocolate chips
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare Wet Ingredients:
- In a large mixing bowl, combine the mashed bananas, peanut butter, honey or maple syrup, and vanilla extract. Mix until well combined.
- Combine Dry Ingredients:
- In a separate bowl, whisk together the rolled oats, protein powder, baking soda, and salt.
- Combine Wet and Dry Ingredients:
- Gradually add the dry ingredients to the wet ingredients, mixing until a thick cookie dough forms.
- Fold in Chocolate Chips:
- Gently fold in the chocolate chips until evenly distributed throughout the dough.
- Form Cookies:
- Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them a few inches apart.
- Flatten Cookies:
- Using the back of a fork or your fingers, flatten each cookie slightly as these cookies don’t spread much during baking.
- Bake:
- Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
- Cool:
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
- Enjoy:
- Once cooled, enjoy these delicious and protein-packed cookies with a glass of milk or your favorite beverage.
