Peanut butter, banana & chocolate chip protein cookies

Ingredients:

  • 1 cup ripe bananas, mashed (about 2 medium bananas)
  • 1 cup creamy peanut butter (or your favorite nut butter)
  • 1/2 cup honey or maple syrup
  • 1 teaspoon vanilla extract
  • 1 1/2 cups rolled oats
  • 1/2 cup vanilla protein powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Prepare Wet Ingredients:
    • In a large mixing bowl, combine the mashed bananas, peanut butter, honey or maple syrup, and vanilla extract. Mix until well combined.
  3. Combine Dry Ingredients:
    • In a separate bowl, whisk together the rolled oats, protein powder, baking soda, and salt.
  4. Combine Wet and Dry Ingredients:
    • Gradually add the dry ingredients to the wet ingredients, mixing until a thick cookie dough forms.
  5. Fold in Chocolate Chips:
    • Gently fold in the chocolate chips until evenly distributed throughout the dough.
  6. Form Cookies:
    • Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them a few inches apart.
  7. Flatten Cookies:
    • Using the back of a fork or your fingers, flatten each cookie slightly as these cookies don’t spread much during baking.
  8. Bake:
    • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  9. Cool:
    • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
  10. Enjoy:
    • Once cooled, enjoy these delicious and protein-packed cookies with a glass of milk or your favorite beverage.
