ONE POINT Blueberry Muffins
Ingredients:
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/4 cup unsweetened applesauce
- 1/4 cup plain non-fat Greek yogurt
- 1/4 cup granulated sugar substitute (such as Stevia or another no-calorie sweetener)
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly coat with non-stick spray.
- Combine Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt.
- Prepare Wet Ingredients: In another bowl, mix together the applesauce, Greek yogurt, sugar substitute, egg, and vanilla extract until well combined.
- Combine Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
- Add Blueberries: Gently fold in the blueberries until evenly distributed throughout the batter.
- Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
- Bake: Bake in the preheated oven for approximately 15-18 minutes or until a toothpick inserted into the center comes out clean.
- Cool: Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
- Serve: Serve your one-point blueberry muffins and enjoy!
