ONE POINT Blueberry Muffins

Ingredients:

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsweetened applesauce
  • 1/4 cup plain non-fat Greek yogurt
  • 1/4 cup granulated sugar substitute (such as Stevia or another no-calorie sweetener)
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or lightly coat with non-stick spray.
  2. Combine Dry Ingredients: In a bowl, whisk together the flour, baking powder, baking soda, and salt.
  3. Prepare Wet Ingredients: In another bowl, mix together the applesauce, Greek yogurt, sugar substitute, egg, and vanilla extract until well combined.
  4. Combine Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients and stir until just combined. Be careful not to overmix.
  5. Add Blueberries: Gently fold in the blueberries until evenly distributed throughout the batter.
  6. Fill Muffin Cups: Spoon the batter into the prepared muffin cups, filling each about two-thirds full.
  7. Bake: Bake in the preheated oven for approximately 15-18 minutes or until a toothpick inserted into the center comes out clean.
  8. Cool: Allow the muffins to cool in the tin for a few minutes, then transfer them to a wire rack to cool completely.
  9. Serve: Serve your one-point blueberry muffins and enjoy!
