No-Bake Pineapple Dream Dessert
Ingredients:
Crust:
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 1/4 cup granulated sugar
Filling:
- 16 oz cream cheese, softened
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 cups crushed or small chunk pineapple, drained
- 1 cup heavy whipping cream
Topping:
- 1 cup heavy whipping cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- 1/4 cup toasted coconut (optional)
Instructions:
Prepare the Crust:
In a medium bowl, mix the graham cracker crumbs, granulated sugar, and melted butter until well combined.
Personal Tip: Press the mixture into the bottom of a 9×13-inch baking dish, using the back of a spoon to ensure an even layer. Refrigerate the crust while preparing the filling.
Prepare the Filling:
In a large bowl, beat the softened cream cheese until smooth and creamy. Add the powdered sugar and vanilla extract, and continue to beat until well combined.

In a separate bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the cream cheese and pineapple mixture until fully incorporated. Spread the filling evenly over the chilled crust.

In a bowl, whip the heavy cream with the powdered sugar and vanilla extract until stiff peaks form.

Spread or pipe the whipped cream over the filling layer.
Toast the Coconut:
Preheat the oven to 350°F (175°C). Spread the shredded coconut in an even layer on a baking sheet. Bake for 5-10 minutes, stirring occasionally, until the coconut is golden brown and toasted. Let the toasted coconut cool before using.
