Mushroom and Avocado Breakfast Plate

Ingredients:

 2 boiled eggs, halved

 1/2 avocado

🍅

 Fresh tomato slices

🍄

 Sautéed mushrooms

🌿

 Steamed spinach

🧂

 Salt and pepper to taste

 Whole grain toast (optional)

 Fresh herbs for garnish (optional)


Instructions:


Boil the Eggs: Place the eggs in a pot of water and bring to a boil. Once boiling, simmer for about 8-10 minutes. Cool the eggs in an ice bath, peel, and halve.
Prepare the Vegetables: Wash and slice the tomatoes. Halve the avocado and remove the pit.
Sauté the Mushrooms: In a skillet, heat a bit of olive oil over medium heat. Add the sliced mushrooms and sauté until golden brown and tender. Season with salt and pepper.
Steam the Spinach: In a pot, steam the spinach for about 2-3 minutes until wilted.
Assemble the Plate: On a large plate, arrange the halved eggs, avocado, tomato slices, sautéed mushrooms, and steamed spinach. Optionally, add a slice of whole grain toast topped with the sautéed mushrooms.
Season and Serve: Sprinkle the eggs and avocado with salt and pepper to taste. Garnish with fresh herbs if desired.
