Low Carb Cucumber Egg Salad Recipe

Ingredients

  • 6 eggs hardboiled
  • 1 cucumber chopped
  • 3 celery stalks chopped
  • 6 slices bacon cooked and crumbled
  • 2 green onions chopped
  • 1/4 cup fresh parsley chopped
  • 1/3 cup mayo
  • 1 tbsp spicy brown mustard
  • 1 tsp hot sauce
  • 1 tsp paprika

Instructions

  1. In a large bowl, combine chopped eggs and cucumber.
  2. Add chopped celery, bacon, and green onions.
  3. In a separate bowl, combine mayo, mustard, and hot sauce.
  4. Pour mixture over the chopped ingredients. Stir well.
  5. Add fresh parsley and paprika. Stir.
  6. Top with additional bacon crumbles and fresh parsley, if desired.
  7. Enjoy!
