Low Carb Cucumber Egg Salad Recipe
Ingredients
- 6 eggs hardboiled
- 1 cucumber chopped
- 3 celery stalks chopped
- 6 slices bacon cooked and crumbled
- 2 green onions chopped
- 1/4 cup fresh parsley chopped
- 1/3 cup mayo
- 1 tbsp spicy brown mustard
- 1 tsp hot sauce
- 1 tsp paprika
Instructions
- In a large bowl, combine chopped eggs and cucumber.
- Add chopped celery, bacon, and green onions.
- In a separate bowl, combine mayo, mustard, and hot sauce.
- Pour mixture over the chopped ingredients. Stir well.
- Add fresh parsley and paprika. Stir.
- Top with additional bacon crumbles and fresh parsley, if desired.
- Enjoy!
