LOW CARB BROCCOLI SALAD WITH BACON

Ingredients:

  • 4 cups broccoli florets
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup sunflower seeds
  • 1/4 cup diced red onion
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon granulated erythritol (or your preferred keto-friendly sweetener)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions:

  1. In a large mixing bowl, combine the broccoli florets, crumbled bacon, sunflower seeds, and diced red onion.
  2. In a separate smaller bowl, whisk together the mayonnaise, apple cider vinegar, granulated erythritol, salt, and black pepper until well combined. This will be the dressing for your salad.
  3. Pour the dressing over the broccoli mixture and toss gently until all the ingredients are coated with the dressing.
  4. Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together and the broccoli to slightly soften.
  5. Before serving, give the salad a good stir and adjust the seasoning if needed.
  6. Serve the Keto Broccoli Salad chilled and enjoy!
