Light Garlic Butter Shrimp with Asparagus

Enjoy a lighter version of this garlic butter shrimp and asparagus recipe without sacrificing flavor. This Weight Watchers-friendly adaptation is just as delicious.

Ingredients:

  • 1 1/2 lbs (700g) medium raw shrimp, peeled and deveined
  • 1 1/2 lbs (700g) asparagus (1 bunch), rinsed and trimmed
  • 1 1/2 tablespoons light butter
  • 1/2 tablespoon olive oil
  • 5 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 2 teaspoons onion powder
  • Salt and fresh cracked pepper, to taste
  • 1/4 cup (60ml) reduced-sodium vegetable broth
  • 1/2 tablespoon Sriracha (or any preferred hot sauce)
  • Crushed red chili pepper flakes (optional)
  • Juice of 1/2 lemon
  • Fresh chopped parsley or cilantro, for garnish

Directions:

  1. In a large non-stick skillet over medium heat, add the olive oil and 1 tablespoon of light butter. Place the trimmed asparagus in the pan and season to taste. Sauté the asparagus until it’s crisp-tender, which should take about 4-6 minutes. Once done, remove the sautéed asparagus from the pan and set it aside.
  2. In the same skillet, add the remaining 1/2 tablespoon of light butter and the raw shrimp. Season the shrimp with salt and pepper and cook for 1-2 minutes on one side.
  3. Add the minced garlic, Italian seasoning, and onion powder to the shrimp. Stir to combine, then flip the shrimp to cook on the other side. Cook the shrimp for an additional minute before adding 1/4 cup of reduced-sodium vegetable broth and Sriracha. Let the sauce reduce for about 1 minute, being careful not to overcook the shrimp.
  4. Push the cooked shrimp to the side and add the sautéed asparagus back to the pan. Stir the asparagus to coat them in the sauce. Squeeze half a lemon over the shrimp and asparagus, and let it reheat for 1-2 minutes.
  5. Remove the cooked shrimp and asparagus from the heat, garnish with parsley, lemon slices, and red crushed chili pepper flakes (if desired). Serve your light garlic butter shrimp with asparagus immediately—Enjoy! ❤️
