LENTIL MEATBALLS
LENTIL MEATBALLS
Ingredients:⠀
1 cup green lentils, cook⠀
1/2 medium onion, minced⠀
1 carrot, grated⠀
200 gr cabbage, minced⠀
200 gr mushrooms, minced⠀
6 tbsp tomato paste⠀
5 tbsp vegan mayonnaise⠀
50 ml almond milk⠀
Salt, peppers, smoked paprika, oregano, garlic powder
Instructions⠀
Heat the oil in a frying pan, add onions and carrots, saute for 3-5 minutes⠀
Add mushrooms, cabbage, salt and spices. Stew until fully cooked.⠀
Add cooked lentils, mix and let it cool down⠀
Form medium sized balls and place them in the baking dish.⠀
Bake for 10 minutes at 350F.⠀
Bring tomato paste into the heated pan, add vegan mayo, pepper and garlic powder, stir.⠀
Add almond milk, bring to boil.⠀
Pour the sauce over the “meatballs”, bake 15 minutes at 350F. Enjoy!
