Instructions:
Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
Prepare the Zucchini: Wash the zucchinis and slice them into 1/4-inch thick rounds. Arrange the zucchini slices on the prepared baking sheet in a single layer.
Season the Zucchini: Lightly sprinkle the zucchini slices with salt and pepper.
Add Sauce: Spoon a small amount of marinara sauce onto each zucchini slice, spreading it evenly.
Add Cheese and Toppings: Sprinkle shredded mozzarella cheese on top of each zucchini slice, followed by the mini pepperoni slices or your preferred keto-friendly toppings. Then, sprinkle a little grated Parmesan cheese and Italian seasoning over the top.
Bake: Place the baking sheet in the preheated oven and bake for about 10-12 minutes, or until the cheese is melted and bubbly.
Garnish and Serve: Remove from the oven and let cool for a few minutes. Garnish with fresh basil leaves if desired. Serve immediately.
