Keto Zucchini Fritters

Ingredients:

  • 2 medium zucchinis
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper to taste
  • 1-2 tablespoons olive oil (or coconut oil) for frying
  • Fresh parsley (optional for garnish)

Instructions:

  1. Prepare the zucchini:
    • Grate the zucchinis using a box grater or a food processor.
    • Place the grated zucchini in a clean kitchen towel or cheesecloth, and squeeze out excess moisture. This will help the fritters stay crisp.
  2. Mix the ingredients:
    • In a large bowl, combine the grated zucchini, almond flour, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Stir until everything is well mixed.
  3. Form the fritters:
    • Scoop about 1-2 tablespoons of the zucchini mixture and form small patties with your hands.
  4. Fry the fritters:
    • Heat a tablespoon or two of olive oil in a large skillet over medium heat.
    • Place the fritters in the pan, making sure not to overcrowd them. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
  5. Serve:
    • Remove the fritters from the pan and drain on a paper towel to remove excess oil.
    • Garnish with fresh parsley if desired and serve hot.
