Ingredients:
- 2 medium zucchinis
- 1/2 cup almond flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Salt and pepper to taste
- 1-2 tablespoons olive oil (or coconut oil) for frying

Instructions:
- Prepare the zucchini:
- Grate the zucchinis using a box grater or a food processor.
- Place the grated zucchini in a clean kitchen towel or cheesecloth, and squeeze out excess moisture. This will help the fritters stay crisp.
- Mix the ingredients:
- In a large bowl, combine the grated zucchini, almond flour, Parmesan cheese, egg, garlic powder, onion powder, salt, and pepper. Stir until everything is well mixed.
- Form the fritters:
- Scoop about 1-2 tablespoons of the zucchini mixture and form small patties with your hands.
- Fry the fritters:
- Heat a tablespoon or two of olive oil in a large skillet over medium heat.
- Place the fritters in the pan, making sure not to overcrowd them. Cook for about 3-4 minutes on each side, or until golden brown and crispy.
- Serve:
- Remove the fritters from the pan and drain on a paper towel to remove excess oil.
