Keto Zucchini Casserole

Ingredients:

  • 4 medium zucchinis, thinly sliced
  • 2 tbsp butter (or olive oil)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp red pepper flakes (optional, for a bit of heat)
  • 1/2 cup shredded cheddar cheese (optional, for topping)
  • 1/4 cup almond flour (optional, for a crispy topping)
  • Fresh herbs, like parsley or basil (for garnish)

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Prepare the zucchini:
    • Slice the zucchinis into thin rounds or half-moons. Place them on a clean kitchen towel or paper towels and lightly salt them. Let them sit for 10-15 minutes to draw out excess moisture. Pat dry to remove the moisture.
  3. Cook the zucchini:
    • In a large skillet, melt the butter or heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until softened, about 3-4 minutes.
    • Add the sliced zucchini and cook for another 5-7 minutes, until slightly tender but not mushy. Stir occasionally to ensure even cooking.
  4. Make the creamy sauce:
    • Reduce heat to low and pour in the heavy cream. Stir in the mozzarella and Parmesan cheeses. Season with salt, pepper, and red pepper flakes (if using). Stir until the sauce is creamy and the cheese has melted completely. Adjust seasoning to taste.
  5. Assemble the casserole:
    • Transfer the zucchini mixture into a greased 9×9-inch (or similar size) baking dish. Use a spoon to evenly spread the mixture out.
  6. Add topping (optional):
    • If you want a crispy topping, mix the shredded cheddar cheese with almond flour, and sprinkle it evenly over the casserole. This adds a crunchy texture and a bit more flavor.
  7. Bake:
    • Place the casserole in the oven and bake for 20-25 minutes, or until the top is golden and bubbly.
  8. Serve:
    • Remove from the oven, let it cool slightly, and garnish with fresh herbs like parsley or basil. Serve warm and enjoy!
