Keto Yorkshire Puddings

Ingredients:

  • 3 large eggs
  • 1/2 cup almond flour
  • 1/2 cup unsweetened almond milk
  • 1/2 tsp salt
  • 1/4 cup beef dripping or bacon fat (for greasing the muffin tin)

Instructions:

1. Preheat the Oven:
  • Groove the oven to 425°F (220°C) preheated. Assemble a muffin tin at a high temperature by preheating it in the oven.
2. Prepare the Batter:
  • In a bowl, whisk together the eggs, almond flour, almond milk, and salt. Ensure that the batter is well mixed and smooth.
3. Grease the Muffin Tin:
  • Carefully remove the hot muffin tin from the oven and add a small amount of beef dripping or bacon fat into each cup. Return the tin to the oven for a few minutes until the fat is sizzling.
4. Pour the Batter:
  • Once the fat is hot, quickly pour the batter into the muffin tin, filling each cup about halfway.
5. Bake:
  • Re-enter the oven and bake the muffin tray for 15 to 20 minutes, or until the puddings are puffed and have a golden brown color.
6. Serve:
  • Remove the Keto Yorkshire Puddings from the muffin tin and serve them hot. They are the perfect accompaniment to your favorite roast or keto-friendly gravy.
