Keto Stuffed Mushrooms

Ingredients:

  • 12 large white or cremini mushrooms (cleaned and stems removed)
  • 4 oz cream cheese, softened
  • 1/4 cup shredded cheddar cheese (or mozzarella)
  • 1/4 cup grated parmesan cheese
  • 1/4 cup cooked sausage (optional, crumbled, or you can use bacon or ground beef)
  • 2 tbsp chopped fresh parsley (optional, for garnish)
  • 1 tbsp garlic, minced
  • 1 tbsp olive oil (or butter, for sautéing)
  • 1/4 tsp onion powder
  • 1/4 tsp garlic powder
  • Salt and pepper, to taste
  • 1/4 cup almond flour (optional, for a bit of texture, or use regular breadcrumbs if not on keto)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Mushrooms:
    • Carefully remove the stems from the mushrooms, leaving the caps intact. Set the caps aside and finely chop the mushroom stems.
  3. Cook the Filling:
    • In a skillet, heat the olive oil (or butter) over medium heat. Add the chopped mushroom stems and sauté for 3-4 minutes until they release moisture and become soft.
    • Add the minced garlic and cook for another 30 seconds, then remove from the heat.
  4. Make the Stuffing:
    • In a large bowl, combine the softened cream cheese, shredded cheddar cheese, grated parmesan cheese, almond flour (if using), sautéed mushroom stems, sausage (if using), onion powder, garlic powder, salt, and pepper. Mix everything together until smooth and well combined.
  5. Stuff the Mushrooms:
    • Spoon the cheese mixture into each mushroom cap, pressing down gently to pack the filling in. Make sure each cap is generously stuffed.
  6. Bake:
    • Place the stuffed mushrooms on the prepared baking sheet and bake for 20-25 minutes until the mushrooms are tender and the stuffing is golden and bubbly.
  7. Garnish and Serve:
    • Once baked, remove the mushrooms from the oven and sprinkle with fresh parsley for a pop of color.
    • Serve warm and enjoy!

Tips:

  • Add some heat: If you like spice, you can add a pinch of red pepper flakes to the filling for a little kick.
  • Customize your filling: You can substitute the sausage with cooked bacon, ground turkey, or even sautéed spinach for a vegetarian version.
