Keto Southern Fried Cabbage with Bacon
Ingredients:
- 6 slices of bacon, chopped
- 1 medium head of green cabbage, thinly sliced
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (adjust to your spice preference)
- Salt and black pepper to taste
- 1/4 cup chicken broth or water
- 2 tablespoons olive oil or bacon grease
- Fresh parsley or green onions (optional, for garnish)
Instructions:
- Start by cooking the bacon in a large skillet over medium heat until it’s crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain. Save the bacon grease in the skillet.
- In the same skillet with the bacon grease, add the chopped onion and minced garlic. Sauté for a couple of minutes until they become fragrant and translucent.
- Add the sliced cabbage to the skillet, and stir to combine it with the onion and garlic. Cook for 5-7 minutes, or until the cabbage begins to wilt.
- Season the cabbage mixture with red pepper flakes, salt, and black pepper. Adjust the seasonings to your taste.
- Pour in the chicken broth or water to help steam and soften the cabbage. Cover the skillet with a lid and let it simmer for about 10-15 minutes, or until the cabbage is tender, stirring occasionally.
- Once the cabbage is tender, remove the lid and let any excess moisture evaporate. Continue to cook for a few more minutes, allowing the cabbage to brown and caramelize slightly.
- Stir in the cooked bacon and drizzle the olive oil (if needed) to enhance the flavors and create a glossy finish.
