Keto Southern Fried Cabbage with Bacon

Ingredients:

  • 6 slices of bacon, chopped
  • 1 medium head of green cabbage, thinly sliced
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 teaspoon red pepper flakes (adjust to your spice preference)
  • Salt and black pepper to taste
  • 1/4 cup chicken broth or water
  • 2 tablespoons olive oil or bacon grease
  • Fresh parsley or green onions (optional, for garnish)

Instructions:

  1. Start by cooking the bacon in a large skillet over medium heat until it’s crispy. Remove the bacon from the skillet and place it on a paper towel-lined plate to drain. Save the bacon grease in the skillet.
  2. In the same skillet with the bacon grease, add the chopped onion and minced garlic. Sauté for a couple of minutes until they become fragrant and translucent.
  3. Add the sliced cabbage to the skillet, and stir to combine it with the onion and garlic. Cook for 5-7 minutes, or until the cabbage begins to wilt.
  4. Season the cabbage mixture with red pepper flakes, salt, and black pepper. Adjust the seasonings to your taste.
  5. Pour in the chicken broth or water to help steam and soften the cabbage. Cover the skillet with a lid and let it simmer for about 10-15 minutes, or until the cabbage is tender, stirring occasionally.
  6. Once the cabbage is tender, remove the lid and let any excess moisture evaporate. Continue to cook for a few more minutes, allowing the cabbage to brown and caramelize slightly.
  7. Stir in the cooked bacon and drizzle the olive oil (if needed) to enhance the flavors and create a glossy finish.
  8. Taste the Keto Southern Fried Cabbage and adjust the seasonings if necessary.
  9. Garnish with fresh parsley or green onions, if desired.
