Keto Snickers Brownies

Ingredients

For the Brownie Base:

  • 1/2 cup almond flour
  • 1/4 cup cocoa powder (unsweetened)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/3 cup erythritol or monk fruit sweetener
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/2 tsp vanilla extract
  • 1/4 cup sugar-free chocolate chips (optional)

For the Nougat Layer:

  • 1/4 cup almond butter or peanut butter (unsweetened)
  • 2 tbsp butter
  • 2 tbsp erythritol
  • 1 tsp vanilla extract
  • 2 tbsp heavy cream
  • 1/4 cup crushed peanuts (unsalted)

For the Caramel Layer:

  • 1/4 cup butter
  • 1/4 cup allulose or erythritol (allulose works best for gooey caramel)
  • 1/4 cup heavy cream
  • Pinch of salt
  • 1/2 tsp vanilla extract

For the Chocolate Topping:

  • 1/2 cup sugar-free chocolate chips
  • 1 tbsp coconut oil

Instructions

  1. Brownie Base:
    • Preheat oven to 350°F (175°C). Line a square baking dish with parchment paper.
    • Mix almond flour, cocoa powder, baking powder, salt, and sweetener in a bowl.
    • Add eggs, melted butter, and vanilla. Stir until smooth. Fold in chocolate chips (if using).
    • Pour into the pan and bake for 15–18 minutes. Let cool completely.
  2. Nougat Layer:
    • In a saucepan, melt almond butter and butter together. Stir in sweetener, vanilla, and cream.
    • Simmer for 1–2 minutes until thick. Fold in crushed peanuts.
    • Spread evenly over cooled brownie base.
  3. Caramel Layer:
    • Melt butter in a saucepan. Add sweetener and cook until golden (3–5 minutes).
    • Stir in cream, salt, and vanilla. Simmer until thickened.
    • Let cool slightly, then pour over nougat layer. Chill for 10–15 minutes.
  4. Chocolate Topping:
    • Melt chocolate chips and coconut oil together until smooth.
    • Pour over chilled caramel layer and spread evenly.
    • Chill until fully set (30 minutes). Slice into squares and enjoy!
