Keto Snickers Brownies

Ingredients
For the Brownie Base:
- 1/2 cup almond flour
- 1/4 cup cocoa powder (unsweetened)
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/3 cup erythritol or monk fruit sweetener
- 2 large eggs
- 1/4 cup melted butter
- 1/2 tsp vanilla extract
- 1/4 cup sugar-free chocolate chips (optional)
For the Nougat Layer:
- 1/4 cup almond butter or peanut butter (unsweetened)
- 2 tbsp butter
- 2 tbsp erythritol
- 1 tsp vanilla extract
- 2 tbsp heavy cream
- 1/4 cup crushed peanuts (unsalted)
For the Caramel Layer:
- 1/4 cup butter
- 1/4 cup allulose or erythritol (allulose works best for gooey caramel)
- 1/4 cup heavy cream
- Pinch of salt
- 1/2 tsp vanilla extract
For the Chocolate Topping:
- 1/2 cup sugar-free chocolate chips
- 1 tbsp coconut oil
Instructions
- Brownie Base:
- Preheat oven to 350°F (175°C). Line a square baking dish with parchment paper.
- Mix almond flour, cocoa powder, baking powder, salt, and sweetener in a bowl.
- Add eggs, melted butter, and vanilla. Stir until smooth. Fold in chocolate chips (if using).
- Pour into the pan and bake for 15–18 minutes. Let cool completely.
- Nougat Layer:
- In a saucepan, melt almond butter and butter together. Stir in sweetener, vanilla, and cream.
- Simmer for 1–2 minutes until thick. Fold in crushed peanuts.
- Spread evenly over cooled brownie base.
- Caramel Layer:
- Melt butter in a saucepan. Add sweetener and cook until golden (3–5 minutes).
- Stir in cream, salt, and vanilla. Simmer until thickened.
- Let cool slightly, then pour over nougat layer. Chill for 10–15 minutes.
- Chocolate Topping:
- Melt chocolate chips and coconut oil together until smooth.
- Pour over chilled caramel layer and spread evenly.
- Chill until fully set (30 minutes). Slice into squares and enjoy!
