Keto Shrimp Cocktail

Ingredients:

  • 1 lb large shrimp (peeled and deveined, tails on)
  • 4 cups water
  • 1/4 cup lemon juice (freshly squeezed)
  • 2 cloves garlic (crushed)
  • 1 bay leaf
  • 1 tsp Old Bay seasoning (optional, for extra flavor)
  • 1 tbsp salt (for boiling water)

For the Cocktail Sauce:

  • 1/2 cup sugar-free ketchup (or homemade keto-friendly ketchup)
  • 1 tbsp horseradish (adjust to taste for spiciness)
  • 1 tbsp lemon juice
  • 1 tsp Worcestershire sauce (check for no added sugar)
  • Salt and pepper to taste
  • A pinch of hot sauce (optional for extra kick)

Instructions:

  1. Prepare the shrimp:
    • Fill a large pot with 4 cups of water and bring it to a boil.
    • Add the lemon juice, crushed garlic, bay leaf, Old Bay seasoning, and salt to the boiling water.
    • Add the shrimp and cook for 2-3 minutes, or until they turn pink and opaque. Be careful not to overcook them.
    • Remove the shrimp with a slotted spoon and immediately transfer them to a bowl of ice water (or an ice bath) to stop the cooking process.
    • Once cooled, drain the shrimp and pat them dry with paper towels. Refrigerate them until you’re ready to serve.
  2. Make the cocktail sauce:
    • In a small bowl, combine the sugar-free ketchup, horseradish, lemon juice, Worcestershire sauce, salt, pepper, and hot sauce (if using). Mix well until smooth and combined.
    • Taste and adjust seasoning as needed—add more horseradish for heat or more lemon juice for brightness.
  3. Serve:
    • Arrange the shrimp on a platter or in individual cups with a side of cocktail sauce for dipping.
    • Garnish with a slice of lemon and fresh parsley if desired.

Tips:

  • If you prefer a spicier cocktail sauce, increase the amount of horseradish or add a bit more hot sauce.
  • To make your own keto-friendly ketchup, blend tomatoes, vinegar, erythritol (or your favorite keto sweetener), and spices like garlic powder and onion powder.
  • Serve this dish with fresh avocado or a cucumber salad to keep it refreshing and low-carb.
