Ingredients:

  • 1 can (14.75 oz) wild-caught salmon, drained and flaked
  • 1 large egg
  • 1/4 cup almond flour
  • 1/4 cup finely chopped fresh parsley (or 1 tbsp dried parsley)
  • 1/4 cup finely chopped onion (optional, for extra flavor)
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 tsp lemon juice (optional, for a touch of brightness)
  • 1/2 tsp dried dill (or 1 tsp fresh dill, if available)
  • Salt and black pepper, to taste
  • 2 tbsp olive oil (or avocado oil), for frying

Instructions:

  1. Prepare the Salmon: In a large bowl, combine the flaked salmon, egg, almond flour, parsley, Parmesan cheese, garlic, lemon juice (if using), dill, salt, and pepper. Mix well until all ingredients are evenly incorporated.
  2. Form the Cakes: Shape the mixture into patties, about 2-3 inches in diameter and 1/2 inch thick. You should get about 6-8 cakes depending on size.
