Ingredients:
For the Meatloaf:
- 1 ½ lbs ground beef (80/20 preferred)
- ½ lb ground pork (optional for extra flavor)
- 1 cup shredded mozzarella or provolone cheese
- ½ cup grated Parmesan cheese
- 2 large eggs
- 1 small onion, finely chopped
- 1 green bell pepper, finely chopped
- 2 cloves garlic, minced
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp Italian seasoning
- ¼ tsp crushed red pepper flakes (optional)

- 1 cup shredded provolone or mozzarella cheese
- 1 small onion, sliced
- 1 green bell pepper, sliced

Instructions:
- Preheat the oven: Preheat your oven to 375°F (190°C) and grease a loaf pan or line it with parchment paper.
- Prepare the meatloaf mixture:
In a large mixing bowl, combine ground beef, ground pork (if using), mozzarella, Parmesan, eggs, finely chopped onion, finely chopped bell pepper, garlic, salt, pepper, Italian seasoning, and crushed red pepper flakes. Mix until well combined, but don’t overwork the meat. - Shape the meatloaf:
Transfer the mixture to the prepared loaf pan or shape it into a loaf on a baking sheet lined with parchment. Press down gently to make it compact. - Bake:
Bake in the preheated oven for 40 minutes. - Prepare the topping:
While the meatloaf is baking, heat the butter or olive oil in a skillet over medium heat. Sauté the sliced onion and bell pepper until soft and caramelized, about 8-10 minutes. - Add the cheese topping:
Remove the meatloaf from the oven after 40 minutes. Spread the sautéed onions and peppers on top, and sprinkle with shredded cheese. - Finish baking:
Return the meatloaf to the oven and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly. The internal temperature of the meatloaf should reach 160°F (71°C). - Rest and serve:
Let the meatloaf rest for 5-10 minutes before slicing. Serve with a side salad or roasted vegetables for a complete keto meal.
Tips:
- Make it cheesier: Add a layer of cheese in the middle of the meatloaf by dividing the mixture and adding shredded cheese in between layers before shaping the loaf.
- Add mushrooms: For a heartier flavor, sauté mushrooms with the onions and peppers.
- Storage: Store leftovers in an airtight container in the fridge for up to 4 days.
