Keto Pecan Pinwheel Cookies

Ingredients

For the Cookie Dough:

  • 2 cups almond flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 cup granulated erythritol (or other keto sweeteners)
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Pecan Filling:

  • 1 cup pecans, finely chopped
  • 1/4 cup unsweetened shredded coconut (optional)
  • 2 tablespoons granulated erythritol (or other keto sweeteners)
  • 1 teaspoon cinnamon
  • 2 tablespoons unsweetened almond milk (or any nut milk)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Make the Cookie Dough:
    • In a large mixing bowl, combine the almond flour, cocoa powder, erythritol, and salt.
    • Add the softened butter, egg, and vanilla extract. Mix until a dough forms. It should be smooth and slightly sticky.
  3. Prepare the Pecan Filling:
    • In a separate bowl, combine the chopped pecans, shredded coconut (if using), erythritol, and cinnamon.
    • Stir in the almond milk until the mixture is well combined.
  4. Roll Out the Dough:
    • Place the cookie dough between two sheets of parchment paper. Roll it out into a rectangle, about 1/4 inch thick.
    • Remove the top layer of parchment paper.
  5. Add the Filling:
    • Spread the pecan filling evenly over the rolled-out dough.
  6. Form the Pinwheel:
    • Carefully roll the dough from one edge to the other to create a log. Use the parchment paper to help with the rolling.
    • Wrap the log tightly in the parchment paper and refrigerate for about 30 minutes, or until firm.
  7. Slice and Bake:
    • Once chilled, remove the log from the fridge and slice it into 1/4 inch thick pinwheels.
    • Place the pinwheels on the prepared baking sheet, spaced apart.
  8. Bake:
    • Bake in the preheated oven for 10-12 minutes, or until the edges are firm.
    • Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
