Keto Pecan Pinwheel Cookies

Ingredients
For the Cookie Dough:
- 2 cups almond flour
- 1/2 cup unsweetened cocoa powder
- 1/4 cup granulated erythritol (or other keto sweeteners)
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
For the Pecan Filling:
- 1 cup pecans, finely chopped
- 1/4 cup unsweetened shredded coconut (optional)
- 2 tablespoons granulated erythritol (or other keto sweeteners)
- 1 teaspoon cinnamon
- 2 tablespoons unsweetened almond milk (or any nut milk)
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Make the Cookie Dough:
- In a large mixing bowl, combine the almond flour, cocoa powder, erythritol, and salt.
- Add the softened butter, egg, and vanilla extract. Mix until a dough forms. It should be smooth and slightly sticky.
- Prepare the Pecan Filling:
- In a separate bowl, combine the chopped pecans, shredded coconut (if using), erythritol, and cinnamon.
- Stir in the almond milk until the mixture is well combined.
- Roll Out the Dough:
- Place the cookie dough between two sheets of parchment paper. Roll it out into a rectangle, about 1/4 inch thick.
- Remove the top layer of parchment paper.
- Add the Filling:
- Spread the pecan filling evenly over the rolled-out dough.
- Form the Pinwheel:
- Carefully roll the dough from one edge to the other to create a log. Use the parchment paper to help with the rolling.
- Wrap the log tightly in the parchment paper and refrigerate for about 30 minutes, or until firm.
- Slice and Bake:
- Once chilled, remove the log from the fridge and slice it into 1/4 inch thick pinwheels.
- Place the pinwheels on the prepared baking sheet, spaced apart.
- Bake:
- Bake in the preheated oven for 10-12 minutes, or until the edges are firm.
- Allow them to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
