KETO PECAN PIE BROWNIES

Ingredients:

For the Brownies:

  • 1/2 cup (115g) unsalted butter
  • 1 cup (100g) erythritol or a keto-friendly sweetener of your choice
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup (50g) unsweetened cocoa powder
  • 1/2 cup (60g) almond flour
  • 1/4 tsp salt
  • 1/2 tsp baking powder

For the Pecan Pie Topping:

  • 1/2 cup (115g) unsalted butter
  • 1/2 cup (100g) erythritol or a keto-friendly sweetener of your choice
  • 1/2 cup (120ml) heavy cream
  • 1/2 cup (60g) chopped pecans
  • 1/2 tsp vanilla extract
  • A pinch of salt

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C). Grease or line an 8×8-inch (20×20 cm) baking pan with parchment paper.
  2. Prepare the Brownie Batter:
    • In a medium saucepan, melt the butter over low heat. Remove from heat and stir in the erythritol until well combined.
    • Add the eggs, one at a time, beating well after each addition. Mix in the vanilla extract.
    • In a separate bowl, whisk together the cocoa powder, almond flour, salt, and baking powder.
    • Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
    • Pour the brownie batter into the prepared baking pan and spread it out evenly.
  3. Bake the Brownies:
    • Bake in the preheated oven for about 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean. The brownies should be set but still a bit fudgy.
  4. Prepare the Pecan Pie Topping:
    • While the brownies are baking, make the pecan pie topping. In a medium saucepan, melt the butter over medium heat.
    • Stir in the erythritol and cook for 2-3 minutes until the sweetener is dissolved.
    • Add the heavy cream and bring the mixture to a simmer. Continue to cook, stirring frequently, for about 5 minutes or until the mixture thickens slightly.
    • Stir in the chopped pecans, vanilla extract, and a pinch of salt. Remove from heat.
  5. Add the Topping:
    • Once the brownies are baked, remove them from the oven and carefully pour the pecan pie topping over the brownies, spreading it out evenly.
  6. Finish Baking:
    • Return the pan to the oven and bake for an additional 10-15 minutes, or until the topping is bubbly and the pecans are golden brown.
  7. Cool and Serve:
    • Allow the brownies to cool completely in the pan before cutting them into squares. This will help the topping set properly and make it easier to cut clean slices.
