Keto Payday Candy Bars

Ingredients:

For the base:

  • 1 cup sugar-free peanut butter (smooth or chunky)
  • 1/4 cup unsweetened coconut flakes
  • 2 tablespoons coconut oil (melted)
  • 1-2 tablespoons powdered erythritol (or your preferred keto sweetener, adjust to taste)
  • 1 teaspoon vanilla extract

For the coating:

  • 1 cup salted roasted peanuts (crushed)
  • 1/4 cup sugar-free chocolate chips (optional, for drizzling or coating)

Instructions:

  1. Make the Base:
    • In a medium mixing bowl, combine the peanut butter, melted coconut oil, unsweetened coconut flakes, sweetener, and vanilla extract.
    • Stir until everything is well combined and smooth. Adjust the sweetness to your liking.
  2. Form the Bars:
    • Line a small baking pan or a silicone mold with parchment paper.
    • Spread the peanut butter mixture into the pan and press it down to form an even layer.
    • Refrigerate for about 15-20 minutes to firm up the base.
  3. Coat with Peanuts:
    • Once the base is firm, take it out of the fridge and sprinkle the crushed salted peanuts evenly over the top, pressing them gently into the mixture.
    • If you want to drizzle with chocolate, melt the sugar-free chocolate chips and drizzle them over the bars.
  4. Chill and Set:
    • Refrigerate the bars for at least 1-2 hours to let everything firm up.
    • After setting, slice them into bars or squares.
  5. Serve and Enjoy:
