Keto Payday Candy Bars
Ingredients:
For the base:
- 1 cup sugar-free peanut butter (smooth or chunky)
- 1/4 cup unsweetened coconut flakes
- 2 tablespoons coconut oil (melted)
- 1-2 tablespoons powdered erythritol (or your preferred keto sweetener, adjust to taste)
- 1 teaspoon vanilla extract
For the coating:
- 1 cup salted roasted peanuts (crushed)
- 1/4 cup sugar-free chocolate chips (optional, for drizzling or coating)
Instructions:
- Make the Base:
- In a medium mixing bowl, combine the peanut butter, melted coconut oil, unsweetened coconut flakes, sweetener, and vanilla extract.
- Stir until everything is well combined and smooth. Adjust the sweetness to your liking.
- Form the Bars:
- Line a small baking pan or a silicone mold with parchment paper.
- Spread the peanut butter mixture into the pan and press it down to form an even layer.
- Refrigerate for about 15-20 minutes to firm up the base.
- Coat with Peanuts:
- Once the base is firm, take it out of the fridge and sprinkle the crushed salted peanuts evenly over the top, pressing them gently into the mixture.
- If you want to drizzle with chocolate, melt the sugar-free chocolate chips and drizzle them over the bars.
- Chill and Set:
- Refrigerate the bars for at least 1-2 hours to let everything firm up.
- After setting, slice them into bars or squares.
