Keto Oven Roasted Zucchini

Ingredients:

  • 2-3 medium-sized zucchinis
  • 2-3 tablespoons olive oil
  • 2-3 cloves of garlic, minced (optional)
  • Salt and pepper to taste
  • Fresh herbs (such as basil, oregano, or thyme), chopped, for garnish (optional)
  • Grated Parmesan cheese (optional)

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Wash the zucchinis and slice them into rounds or spears, depending on your preference. If your zucchinis are particularly large, you may want to quarter them lengthwise and then slice.
  3. In a large mixing bowl, combine the zucchini slices with olive oil, minced garlic (if using), salt, and pepper. Toss everything together until the zucchini is evenly coated with the seasonings and oil.
  4. Spread the seasoned zucchini in a single layer on a baking sheet. You can line the sheet with parchment paper for easy cleanup.
  5. Roast the zucchini in the preheated oven for about 20-25 minutes, or until they are tender and slightly browned. Be sure to check and stir them occasionally to ensure even roasting.
  6. If desired, you can sprinkle grated Parmesan cheese over the zucchini during the last 5 minutes of roasting. This will add a delicious cheesy crust to your zucchini.
  7. Remove the roasted zucchini from the oven, garnish with fresh herbs, and serve immediately.
