Keto Nachos
Ingredients:
For the Chips:
- 1 1/2 cups shredded mozzarella cheese
- 3/4 cup almond flour
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
For the Toppings:
- 1 lb ground beef (or chicken, turkey, or pork)
- 1 packet taco seasoning (or homemade: 1 tbsp chili powder, 1 tsp cumin, 1 tsp paprika, 1/2 tsp garlic powder, 1/2 tsp onion powder, 1/2 tsp oregano, 1/4 tsp salt)
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup guacamole
- 1/4 cup sliced black olives
- 1/4 cup diced tomatoes
- 1/4 cup chopped cilantro
- 1/4 cup sliced jalapeños
- 1/4 cup diced red onions
Instructions:
Making the Chips:
- Preheat the Oven: Preheat your oven to 375°F (190°C).
- Prepare Cheese Dough: In a microwave-safe bowl, combine the shredded mozzarella cheese and almond flour. Microwave on high for about 1 minute, or until the cheese is melted and you can mix it together into a dough. Add salt, paprika, garlic powder, and onion powder, mixing thoroughly.
- Roll Out Dough: Place the dough between two sheets of parchment paper and roll it out until it’s thin and even, about 1/8 inch thick.
- Cut Chips: Use a pizza cutter or a sharp knife to cut the dough into triangles or chip shapes.
- Bake Chips: Transfer the chips on parchment paper to a baking sheet. Bake for 8-10 minutes, or until the chips are golden brown and crispy. Keep an eye on them to avoid burning.
- Cool Chips: Allow the chips to cool completely on the baking sheet to firm up.
Preparing the Toppings:
- Cook Meat: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat. Add taco seasoning and 1/4 cup of water. Simmer until the water has mostly evaporated and the seasoning is well mixed with the meat.
- Shred Cheese: Grate the cheddar cheese if not already shredded.
- Prepare Vegetables: Dice the tomatoes, slice the olives and jalapeños, chop the cilantro, and dice the red onions.
Assembling the Nachos:
- Layer Chips and Cheese: Place the keto chips on a large baking sheet or oven-safe dish. Sprinkle the cooked ground beef evenly over the chips. Top with shredded cheddar cheese.
- Melt Cheese: Place the nachos in the oven and bake for 5-7 minutes, or until the cheese is melted and bubbly.
- Add Fresh Toppings: Remove the nachos from the oven and top with sour cream, guacamole, sliced black olives, diced tomatoes, chopped cilantro, sliced jalapeños, and diced red onions.
- Serve: Enjoy your delicious keto nachos immediately.
Tips:
- For extra flavor, you can add a squeeze of lime juice over the nachos before serving.
- Feel free to customize the toppings based on your preference or what you have available.
