Keto Nachos

Ingredients:

  • Pork Rinds (1 bag, plain or flavored)
  • Ground Beef (1 pound)
  • Taco Seasoning (1 packet or homemade keto-friendly seasoning)
  • Shredded Cheese (cheddar or a Mexican blend)
  • Optional Toppings:
    • Sour Cream
    • Guacamole or diced avocado
    • Salsa (look for low-carb options)
    • Jalapeños (fresh or pickled)
    • Chopped cilantro
    • Diced tomatoes (in moderation due to carbs)
    • Sliced black olives

Instructions:

  1. Prepare the Meat:
    • In a skillet over medium heat, cook the ground beef until browned and cooked through.
    • Drain excess grease if necessary.
    • Add the taco seasoning and a little water (according to packet instructions or your homemade blend) to the beef. Cook for a few more minutes until the seasoning is well incorporated. Set aside.
  2. Prepare the Pork Rinds:
    • Arrange the pork rinds on a large oven-safe tray or dish in a single layer.
  3. Assemble the Nachos:
    • Sprinkle the cooked ground beef evenly over the pork rinds.
