Keto Mozzarella Sticks

Ingredients

  • 10 sticks of mozzarella cheese (string cheese works well)
  • 1 cup almond flour
  • 2 large eggs
  • 1 cup pork rind crumbs (or use crushed pork rinds)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Oil for frying (avocado oil or coconut oil are good options)

Instructions

  1. Prepare the Cheese Sticks:
    • Cut the mozzarella sticks in half if they are long.
    • Freeze the cheese sticks for about 30 minutes to 1 hour. This step helps prevent them from melting too quickly during frying.
  2. Set Up Breading Station:
    • In one shallow dish, combine almond flour with garlic powder, onion powder, Italian seasoning, salt, and pepper.
    • In a second dish, beat the eggs until well mixed.
    • In a third dish, place the pork rind crumbs.
  3. Bread the Cheese Sticks:
    • Dip each cheese stick in the almond flour mixture, coating it well.
    • Dip it into the beaten eggs, ensuring it’s fully covered.
    • Roll it in the pork rind crumbs until fully coated. You can repeat the egg and pork rind crumb steps for a thicker coating.
    • Place the coated sticks on a tray and freeze them for at least 1 hour. This helps the coating adhere better during frying.
  4. Fry the Cheese Sticks:
    • Heat the oil in a deep pan or fryer to about 350°F (175°C).
    • Fry the cheese sticks in batches, about 1-2 minutes per side, until golden brown and crispy. Be careful not to overcrowd the pan.
    • Remove and drain on paper towels.
  5. Serve:
    • Serve hot with a low-carb marinara sauce or your favorite keto-friendly dipping sauce.
