Keto Mocha Coffee Ice Cream

Ingredients

  • 2 cups heavy cream
  • 1 cup unsweetened almond milk
  • 3/4 cup powdered erythritol or your preferred keto-friendly sweetener
  • 1/4 cup unsweetened cocoa powder
  • 2 tablespoons instant coffee granules
  • 5 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1/4 cup dark chocolate chips (sugar-free)

Instructions

  1. Prepare the Coffee Mixture:
    • In a medium saucepan, combine the almond milk, instant coffee granules, and cocoa powder. Heat over medium heat, stirring constantly until the coffee and cocoa powder are fully dissolved. Remove from heat and set aside.
  2. Make the Custard Base:
    • In a separate bowl, whisk together the egg yolks, powdered erythritol, and salt until well combined.
    • Gradually pour the coffee mixture into the egg yolk mixture, whisking constantly to avoid curdling the eggs.
  3. Cook the Custard:
    • Pour the combined mixture back into the saucepan. Cook over medium-low heat, stirring constantly with a wooden spoon or a spatula, until the mixture thickens and coats the back of the spoon (about 170°F to 175°F or 77°C to 80°C). Do not let it boil.
    • Once thickened, remove from heat and stir in the heavy cream and vanilla extract.
  4. Cool the Mixture:
    • Pour the custard base into a bowl and let it cool to room temperature. Then, cover the bowl with plastic wrap, pressing the wrap directly onto the surface of the custard to prevent a skin from forming. Refrigerate for at least 4 hours or overnight until completely chilled.
  5. Churn the Ice Cream:
    • Pour the chilled custard into your ice cream maker and churn according to the manufacturer’s instructions. About 5 minutes before the ice cream is done churning, add the dark chocolate chips.
  6. Freeze the Ice Cream:
    • Transfer the churned ice cream to an airtight container and freeze for at least 2 hours or until it reaches your desired consistency.

Tips

  • For a smoother texture, you can strain the custard base through a fine-mesh sieve before chilling.
  • Feel free to adjust the sweetness and coffee intensity to your preference by adding more or less erythritol and coffee granules.
