Keto Loaded Cauliflower mash casserole
Ingredients:
1 head of cauliflower ( or use frozen)
16 oz sour cream
1 package of bacon
2 cups of cheddar cheese
1 cup Diced chives
Directions:
Steam cauliflower, dice up in small chunks, you can do as fine as you like I left some chunks bc We like that way.
Cook bacon to the crispness of your liking. Then dice up.
In bowl add diced cauliflower, 2 cups of sour cream, 1 cup of shredded cheese, most of the chives ( same some for the top) most of the bacon ( save some for top) add salt, pepper and garlic powder to your liking. Mix well.
In a greased pan add mixture to your casserole dish, top with 1 cup shredded cheese, then top with bacon and chives.
Cook on 350 for 20 minutes or until bubbly.
Broil for two minutes to toast up the cheese.
